Ingredients
  • 1 bottle (750 ml) of dry white wine
  • 1 head of garlic with skin in halves
  • 500 g of mussels in their clean shells
  • 500 g of clams in their clean shells
  • 1 chicken in 8 pieces
  • salt and pepper to taste
  • 500 g Spanish chorizo in 8 pieces
  • 8 smoked pork chops
  • 8 medium potatoes with skin
  • 500 g firm white fish fillets
  • 500 g unpeeled shrimp
  • 2 medium white cabbages in whole leaves
  • Finely chopped parsley.
Instructions
  • Step 1 - In a large saucepan, add half of the wine and the head of garlic.
  • Step 2 - Once the wine begins to boil add the ingredients in the following order, starting with the mussels and clams at the bottom and along the edge. Then continue with the chicken pieces, skin side down. Season with salt and pepper. Distribute a layer of chorizo and pork chops. On top, cover with potatoes. Finish with a layer of fish fillet and shrimp.
  • Step 3 - Pour the rest of the wine and cover with cabbage leaves. Cook covered over very low heat for about 2 hours.
  • Step 4 - To serve, place the fish and seafood, chicken, potatoes and meats in a large bowl and finish with the hot broth. Garnish with chopped parsley
