Step 1 - To prepare the manjar: Put all the ingredients of the manjar in a large pot and bring to a boil.
Step 2 - Once it begins to boil, reduce heat and cook slowly for 50-60 minutes or until it begins to thicken, stirring constantly to avoid burning or sticking to the bottom of the pan.
Step 3 - Once the time has elapsed, check the consistency of the delicacy by placing a little of the mixture on a plate and let it cool, see if it has the desired consistency or continue cooking.
Step 4 - For the dough: Sift the flour, baking powder and a pinch of salt in a bowl.
Step 5 - Make an egg and add the rest of the ingredients. Mix by hand and knead until the table is smooth.
Step 6 - Roll out the dough 3mm thick. Cut circles of 6 cm, prick with a fork and place the discs on a baking tin. Bake 5 minutes at 180ºC. Cool on a wire rack before filling.
Step 7 - To assemble the alfajores: put the dough in a piping bag and fill one disk of dough and cover with the other. Sprinkle with powdered sugar and serve.
