80 Minutes

  • 6 whole eggs
  • 3 cups flour
  • Salt
  • 1 tablespoon of butter
  • 2 cups granulated sugar
  • 4 tablespoons flour
  • Cinnamon
  • Cloves
  • 2 cups of boiling water.
  • Step 1 - Form the dough, adding the eggs, brandy and butter to the flour with salt. Knead until smooth and roll the dough with a rolling pin to give it a smooth texture, folding the dough in two, each time each side is smoothed.
  • Step 2 - Roll out very thinly and cut circles of approximately 7 cm in diameter. Bake at 200 degrees for 3-5 minutes. Set aside.
  • Step 3 - For the filling, in a saucepan toast sugar and flour with the spices. When it turns brown, add boiling water, keeping enough distance to avoid hot steam.
  • Step 4 - Cook until the flour reaches the desired consistency.
  • Step 5 - Fill 3 layers of dough with this warm bitumen and glue. Finish with powdered dough on the sides of the alfajor.
