Anticuchos de Carne a la Parrilla (Grilled Beef Anticuchos)

Ingredients
  • ½ Kilo of smooth beef tenderloin
  • ½ Kilo of pork pulp
  • ½ Kilo of chicken breast
  • 2 units of handmade sausage
  • 3 tablespoons oil
  • 2 cloves garlic
  • Salt to taste
  • Oregano
  • Pepper to taste
  • 1 tablespoon red chili paste
  • 3 tablespoons red wine vinegar
  • 2 Peppers (1 Red and 1 Green)
  • Fierritos for anticuchos.
Instructions
  • Step 1 - Cut the beef, pork and chicken into cubes. Reserve
  • Step 2 - Cut the sausages into 1 cm thick slices. Set aside
  • Step 3 - In a mortar, add salt, oregano, pepper, chili paste and grind. Add the vinegar and mix.
  • Step 4 - Marinate the pork with the above mixture and set aside.
  • Step 5 - Separately cut the peppers and onion into squares.
  • Step 6 - To form the anticuchos: thread the meats and vegetables alternately.
  • Step 7 - Place the anticuchos on a grill with coals at medium temperature. Grill on both sides for 10 to 15 minutes depending on the size of the meat, season with coarse salt in each of the turns. Serve hot.
