Ingredients
  • 1 cup dried hominy
  • 4 cups of water
  • 2 tablespoon of olive oil
  • 3 tablespoons diced white onion
  • 1 garlic clove
  • 2 cups chicken broth or water
  • 2 units seeded and diced tomatoes
  • 1 piece of seeded and ribbed green bell bell pepper, finely chopped
  • ¼ unit of white onion, chopped in cubes
  • ½ cup fresh cilantro leaves, finely chopped
  • Dried oregano to taste
  • Ground cumin to taste
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt to taste.
Instructions
  • Step 1 - Wash and soak the hominy in plenty of cold water for 3 hours. Drain and set aside.
  • Step 2 - Separately, sweat the onion with the garlic in a pot with oil. Add the reserved mote.
  • Step 3 - Add the chicken broth and cook for 20 minutes. Remove from heat and cool. Set aside.
  • Step 4 - Separately, in a bowl, mix the cooked mote with the tomato, green chili, onion and chopped cilantro.
  • Step 5 - Season with oregano, cumin and salt. Add a splash of vinegar, mix well and finally add the olive oil. Serve cold.
