Ingredients
  • 1 kilo of assorted guatitas (tripe)
  • librillo and lonco)
  • 1 sprig of thyme
  • 1 stalk celery
  • 1 bunch of parsley
  • 2 marraquetas
  • 1 cup milk
  • 2 tablespoon oil
  • 1 large onion chopped in small cubes
  • 2 cloves garlic, chopped
  • 1 sprig of fresh oregano to taste
  • Salt to taste
  • 250 grams of grated cheese.
Instructions
  • Step 1 - Clean the guatitas of excess fat, drain about 4 hours in water with vinegar and salt. Then, filter and put the guatitas to cook in a pressure cooker with water, celery stick and parsley. Cook for 40 minutes or until they are soft. Once the guatitas are cooked, pass through a strainer and chop into strips, reserve and refrigerate.
  • Step 2 - Separately, soak the marraquetas in milk until soft. Set aside.
  • Step 3 - In a frying pan, sauté the oil, onion and garlic until transparent. Add the fresh oregano and the previously chopped peas.
  • Step 4 - Bring to a boil and add the bread soaked in milk, removing excess liquid. Season with salt and cook everything for about 5 minutes.
  • Step 5 - Finally, place the chupe in greased earthenware pans. Sprinkle the surface with grated cheese and bake for 10 to 12 minutes at 180° C.
  • Step 6 - Remove from the oven and serve hot.
