Ingredients
1 kilo of assorted guatitas (tripe)
librillo and lonco)
1 sprig of thyme
1 stalk celery
1 bunch of parsley
2 marraquetas
1 cup milk
2 tablespoon oil
1 large onion chopped in small cubes
2 cloves garlic, chopped
1 sprig of fresh oregano to taste
Salt to taste
250 grams of grated cheese.
Instructions
Step 1 - Clean the guatitas of excess fat, drain about 4 hours in water with vinegar and salt. Then, filter and put the guatitas to cook in a pressure cooker with water, celery stick and parsley. Cook for 40 minutes or until they are soft. Once the guatitas are cooked, pass through a strainer and chop into strips, reserve and refrigerate.
Step 2 - Separately, soak the marraquetas in milk until soft. Set aside.
Step 3 - In a frying pan, sauté the oil, onion and garlic until transparent. Add the fresh oregano and the previously chopped peas.
Step 4 - Bring to a boil and add the bread soaked in milk, removing excess liquid. Season with salt and cook everything for about 5 minutes.
Step 5 - Finally, place the chupe in greased earthenware pans. Sprinkle the surface with grated cheese and bake for 10 to 12 minutes at 180° C.
