Spider Crab Chowder

  • 1 teaspoon chili color
  • 1 clove garlic
  • fine chopping
  • 1 onion, finely chopped
  • 1 teaspoon dried oregano
  • 1 cup fish or seafood broth
  • 500 g. crab meat
  • cooked and crumbled
  • 2 cups white bread crumbs soaked in milk
  • 6 tablespoons grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and pepper
  • ½ cup fresh cream.
  • Step 1 - In a saucepan, heat the oil over medium heat with the aji color and cook the garlic and onion until soft, without browning. Stir in the oregano and fish stock and bring to a boil.
  • Step 2 - Preheat the oven to medium-high temperature (190°C).
  • Step 3 - Add to the mixture the crab meat, bread soaked with milk, 3 tablespoons of grated cheese and butter. Cook over medium heat, stirring until the mixture thickens. Season and add the cream, stirring.
  • Step 4 - Pour the mixture into a baking dish, sprinkle the surface with the remaining grated cheese and bake until golden brown. Serve hot.
