Ingredients
  • 250 g of white chuño or tunta
  • Salt to taste
  • Pepper to taste
  • ¼ cup oil
  • 1 onion, finely chopped
  • 1 tomato, peeled and finely chopped
  • 3 eggs
  • 1 fresh cheese in crumbs.
Instructions
  • Step 1 - Soak the chuño in plenty of cold water for 12 hours.
  • Step 2 - Chop the chuño into pieces and wash in cold water several times to eliminate bitter flavors.
  • Step 3 - Place the chuño in a pot and add 1 teaspoon of salt. Cover with cold water, bring to a boil over medium heat and cook until the chuño is soft. Filter and set aside.
  • Step 4 - In a frying pan heat the oil and brown the onion. Add the tomato and salt, cook for 5 minutes.
  • Step 5 - Add the eggs and stir.
  • Step 6 - Add the chuño, stir and cook for 5 more minutes.
  • Step 7 - Incorporate the cheese crumbs, stir and serve immediately.
