Step 1 - Put the beef, garlic, oregano, salt and water in a pressure cooker. Cook for 35 to 40 minutes. Set aside
Step 2 - Separately, heat oil in a pot and add onion, carrot, red pepper and fresh oregano. Sweat for a few minutes and add the reserved meat with the filtered broth. Bring to a boil.
Step 3 - Add the potatoes, pumpkin and rice. Cook over low heat for 10 minutes.
Step 4 - After the time has elapsed, add the corn, green beans and peas. Cook until soft.
Step 5 - Serve hot. Optional: serve with green chili or salsa verde.
