Lamb Casserole with Luche

  • ¼ cup oil
  • 6 pieces of lamb meat
  • 1 teaspoon chili color or sweet paprika
  • 1 onion, finely chopped
  • 2 cloves garlic, chopped
  • 2 carrots cut in thin slices
  • 1 teaspoon dried oregano
  • Salt to taste
  • 6 medium potatoes, peeled
  • 60 g of dried luche
  • soaked in water for 12 hours and washed
  • Finely chopped cilantro for garnish.
Instructions
  • Step 1 - Brown the lamb pieces in a large pot with a little oil. Remove to a plate and set aside.
  • Step 2 - In the same pot, add chili, onion and garlic. Sauté until the onion is transparent.
  • Step 3 - Incorporate the carrots, oregano and lamb pieces.
  • Step 4 - Cover with cold water and season.
  • Step 5 - Cook the casserole over medium heat for 20 to 30 minutes.
  • Step 6 - Incorporate the potatoes and finish cooking, add the soaked and cleaned luche. Cook for 10 minutes.
  • Step 7 - Serve the casserole very hot in individual bowls decorated with chopped coriander.
