Ingredients
  • 1 large chicken cut into 6 pieces
  • 2 tablespoons vegetable oil
  • ½ teaspoon chili color
  • 1 large onion, chopped
  • 1 large carrot peeled and cut into thin strips
  • 1 red bell pepper, seeded and cut into strips
  • salt and pepper to taste
  • 10 cups of boiling water
  • 6 medium potatoes, peeled
  • 2 tablespoons polenta or chuchoca
  • 2 ears of corn, cut in 3
  • 500 g pumpkin cut in 6 pieces
  • 1 cup green beans in strips
  • finely chopped parsley.
Instructions
  • Step 1 - In a large saucepan, heat a little oil with aji de color and brown the chicken. Add the onion, carrot, herbs and paprika, sauté for 5 minutes. Pour the boiling water and season with salt and pepper. Cook over low heat for 2 to 3 hours or until the chicken is tender and cooked.
  • Step 2 - Add the potatoes, poleta or chuchoca, corn and squash. Cook over low heat for 20 minutes, stirring occasionally.
  • Step 3 - Before serving, add the green beans and cook until soft.
  • Step 4 - To serve, put a piece of corn, pumpkin, potatoes and a piece of chicken. Cover with broth and the rest of the vegetables. Sprinkle with chopped parsley.
