Step 1 - In a large saucepan, heat a little oil with aji de color and brown the chicken. Add the onion, carrot, herbs and paprika, sauté for 5 minutes. Pour the boiling water and season with salt and pepper. Cook over low heat for 2 to 3 hours or until the chicken is tender and cooked.
Step 2 - Add the potatoes, poleta or chuchoca, corn and squash. Cook over low heat for 20 minutes, stirring occasionally.
Step 3 - Before serving, add the green beans and cook until soft.
Step 4 - To serve, put a piece of corn, pumpkin, potatoes and a piece of chicken. Cover with broth and the rest of the vegetables. Sprinkle with chopped parsley.
