Ingredients
  • 4 units of pig's trotters
  • 4 units of pig's trotters
  • 1 sprig of parsley
  • 1 unit large onion, diced
  • 3 tablespoons chopped cilantro
  • 2 large tomatoes
  • ½ green bell pepper, diced
  • Juice of half a lemon
  • 3 cloves garlic
  • Salt to taste
  • Pepper
  • Oil
  • Chilean red chili paste.
Instructions
  • Step 1 - Wash the pig's feet and carefully pass them through the flames of the stove to remove the animal's hair.
  • Step 2 - Cut the legs in half lengthwise and cook in plenty of boiling water with a sprig of parsley for 1 hour.
  • Step 3 - Style the legs, debone and chop into cubes. Place in a bowl.
  • Step 4 - Add onion, garlic, bell bell pepper and chopped coriander leaves. Stir well and add the chopped tomatoes.
  • Step 5 - Season with oil, salt, pepper, lemon juice and chili paste to taste.
