Ingredients
  • 1 piece of defatted chicken goose of steer (1½ kilo)
  • 3 tablespoons oil
  • salt to taste
  • colored chili
  • dried oregano to taste
  • 3 cloves of garlic cut in half
  • 1 piece of carrot cut into long sticks
  • 1 stalk celery cut into long sticks
  • 1 onion chopped in irregular cuts
  • ¼ red bell pepper cut into strips
  • 8 to 10 canned tomatoes
  • 1½ liter of water.
Instructions
  • Step 1 - Trim excess fat from the meat and with a thin knife make holes to insert the carrot, celery and garlic alternately, along the entire length of the meat.
  • Step 2 - Season the meat with salt, aji de color and a little oregano.
  • Step 3 - Heat a little oil in a frying pan and brown the meat on all sides.
  • Step 4 - In a pressure cooker put the onion, paprika and tomato. Add water and season with salt. Put the meat inside the cooker and cook for 35 to 40 minutes approx. Once the time is over, remove the meat and cut into slices.
  • Step 5 - It is recommended to blend the cooking juice with the vegetables to be used as a sauce. Serve the meat with mashed potatoes or rice.
