Broken Calzones with Palm Honey

Ingredients
  • 5 cups flour
  • 2 tablespoons baking powder
  • 1 cup powdered sugar
  • 3 tablespoons softened butter
  • 1 whole egg
  • 2 egg yolks
  • 1 tablespoon lemon zest
  • 2 tablespoons of aguardiente or pisco
  • Vegetable oil for frying
  • Blossom sugar for sprinkling
  • Palm honey to serve.
Instructions
  • Step 1 - Sift the flour, baking powder and powdered sugar on a surface. Form a crown and add the butter, egg, egg yolks, lemon zest and brandy or pisco to the center.
  • Step 2 - Mix all the ingredients and form a dough, without kneading.
  • Step 3 - Roll out the dough ½ cm thick and cut rectangles 5x9cm long.
  • Step 4 - In each rectangle make a cut in the center, pass one end of the rectangle and stretch slightly.
  • Step 5 - Fry in abundant oil a few at a time, until lightly browned. Remove excess oil with absorbent paper.
  • Step 6 - To serve, sprinkle with powdered sugar, serve warm with palm honey.
