4 pieces (250 g each) of kid with bone (back or loin)
Salt to taste
Pepper to taste
6 tablespoons oil
½ cup butter
1 kilo of small new potatoes, scraped and washed
2 sprigs of fresh thyme
2 cloves garlic, chopped
1 tablespoon chopped parsley
2 chopped scallions.
Instructions
Step 1 - Season the kid pieces with salt and pepper. Set aside
Step 2 - In a frying pan, heat half of the oil over medium heat and brown the pieces of kid. Reduce the heat and continue cooking until the kid is tender. Remove to a plate and set aside.
Step 3 - Separately, heat the rest of the oil and half of the butter over medium heat in a large pot, brown the potatoes with the thyme. Reduce heat, add water, salt and cook until potatoes are tender.
Step 4 - Once the kid is cooked, remove excess oil and add the remaining butter, garlic, parsley and chives. Sauté for a few minutes.
Step 5 - Add the cooked kid pieces and stir well.
Step 6 - To serve: place the pieces of kid and serve with the cooked potatoes. Serve piping hot.
