Ingredients
  • 1 ½ kilos of pork loin or other lean pork meat
  • ½ cup red wine vinegar
  • 4 cloves of garlic, finely chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon chili sauce
  • 1 tablespoon dried oregano
  • Salt to taste
  • Pepper to taste
  • Large piece of pigskin.
Instructions
  • Step 1 - Cut the pork into long thin strips. Place them in an extended dish.
  • Step 2 - Season with vinegar and the rest of the seasonings. Mix very well. Refrigerate for 1 to 2 hours.
  • Step 3 - Spread the pork skin on a smooth surface and cover with the marinated strips.
  • Step 4 - Roll the leather tightly over the strips of meat. Tie with string and let stand for 24 hours in the refrigerator.
  • Step 5 - Place the roll in a pot and cover with water. Bring to a boil, reduce heat and cook for 1 to 2 hours, until the meat is tender.
  • Step 6 - Remove the roll from the water and allow to cool before slicing. Serve at room temperature.
