Ingredients
  • 2 cups of donkey beans (soaked overnight)
  • 400 grs of peeled and diced pumpkin
  • 2 tablespoons oil
  • 1 unit large onion, diced
  • 2 cloves garlic, chopped
  • 1 teaspoon chili color
  • ½ teaspoon oregano
  • 1 pinch of ground cumin
  • ¼ package of noodles 78
  • Salt to taste.
Instructions
  • Step 1 - Rinse the beans and put them to cook in abundant water with a branch of celery and pork skin or a vetoed chop. Once cooked, reserve in its cooking broth.
  • Step 2 - Separately, in a saucepan, make a sofrito with the oil, onion and garlic. Sweat gently, and add the chili, oregano and ground cumin.
  • Step 3 - Add the beans to the sauce, the pumpkin and the cooking broth to cover, reserving the excess broth in a separate container. Cook for about 5 minutes over low heat.
  • Step 4 - Finally, add the noodles, stirring constantly so that they do not stick together.
  • Step 5 - Cook for about 10 minutes, add salt and rest for a few minutes.
  • Step 6 - Serve hot with a little chili bell pepper or with sliced sausages.
