Step 1 - In a saucepan place the orange peel and juice together with the wine, sugar, cinnamon, cloves, nutmeg and 1 liter of cold water.
Step 2 - Boil for 3 minutes. Reduce heat and add pears, cover and cook over low heat until pears are soft for 30 to 45 minutes, turning to cook evenly.
Step 3 - Carefully remove the pears to a bowl and set aside.
Step 4 - Return the cooking liquid to a boil over medium heat for 10 minutes or until slightly thickened. Pour the liquid over the pears in the bowl and refrigerate. Serve the pears with the syrup.
Step 5 - Note: They can also be prepared in pieces or balls, taking care to reduce cooking times so that they keep their shape.
