Pebre de Cochayuyo with Avocado and Green Peppers

Ingredients
  • 2 cup of cooked and diced cochayuyo (seaweed)
  • ¾ cup diced white onion
  • 1 unit of green chili chopped in cubes
  • 2 tablespoons diced green paprika
  • 1 clove garlic
  • 3 tablespoons chopped cilantro
  • Salt to taste
  • 1 teaspoon fresh or dried oregano to taste
  • ⅛ teaspoon ground cumin to taste
  • 4 tablespoons lemon juice
  • 1 tablespoon of olive oil
  • 1 tablespoon red wine vinegar
  • 1½ unit of diced avocado
  • 1 tablespoon of oil.
Instructions
  • Step 1 - In a bowl put the cochayuyo, onion, chili and green pepper.
  • Step 2 - Add the chopped garlic and cilantro. Season with salt, oregano and ground cumin.
  • Step 3 - Add the lemon juice and vinegar.
  • Step 4 - Incorporate the chopped avocado, add oil and mix well.
  • Step 5 - Garnish with green chili bell pepper rings and cilantro leaves.
