Stuffed Potatoes

  • 1 kilo of potatoes, peeled and diced
  • Salt to taste
  • Pepper to taste
  • 2 - 3 tablespoons of oil
  • 2 onions, finely chopped
  • 1 garlic clove, finely chopped
  • 500 g ground beef meal
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Frying oil
  • ½ cup flour
  • 4 hard-boiled eggs in quarters.
  • Step 1 - In a pot cook the potatoes in plenty of salted water until they are soft. Once cooked, drain and mash to form a puree. Cool while preparing the meat filling.
  • Step 2 - For the stuffing: Heat the oil in a skillet over medium heat and sweat the onions with the garlic until the onion is transparent. Add the meat, cumin, oregano, aji de color, salt and pepper. Cook stirring until the meat is cooked. Remove from heat and let cool. Set aside.
  • Step 3 - Heat oil in a frying pan.
  • Step 4 - To assemble the stuffed potatoes: Put flour in your hands and then take some of the reserved mashed potatoes, mash it in your hand to spread it, add to the center a spoonful of the meat filling and a quarter of a hard-boiled egg. Add a little mashed potato on top of the filling and close the potato, wrapping the filling and helping yourself with a little flour if necessary so that it does not stick to your hands.
  • Step 5 - Fry the stuffed potatoes in the hot oil until golden brown on both sides. Stretch on absorbent paper and serve.
