  • 12 peach stones
  • 1 cinnamon stick
  • 1 orange peel
  • 1 cup sugar
  • 1 cup of cooked wheat hominy.
  • Step 1 - The night before, soak the bones in 3 cups of cold water with the cinnamon and orange peel.
  • Step 2 - The next day, in a saucepan, cook the bones and soaking water for 30 minutes or until the bones are soft. Remove the pot from the heat and set aside.
  • Step 3 - In a frying pan make a dark caramel with the sugar and a little water. Pour the caramel into the pan with the hot bones and stir until the caramel dissolves. Let cool and refrigerate for 4 hours.
  • Step 4 - To serve, distribute 2 bones and 3 spoonfuls of cooked mote in tall glasses or bowls and cover with the cooking liquid. Serve very cold.
