Step 1 - Wash the figs and place them in a pot with enough water and a little salt. Cook for 10 minutes, removing the foam from the surface. Remove the figs from the water and prick the skin at the ends with a fork. Set aside.
Step 2 - Hollow out the figs with the help of a corer or small spoon, place the inside in a bowl.
Step 3 - Mix the filling with the walnuts. Fill each fig with the mixture.
Step 4 - Separately, in a saucepan place the sugar, vanilla and 1 liter of water, bring to a boil over medium heat, stirring until the sugar dissolves. Place the figs in such a way that the filling does not fall out and boil over medium heat for 20 minutes. Remove from heat and let the figs stand in the syrup for 24 hours.
Step 5 - After the time has elapsed, return the figs to a boil over medium heat for 20 minutes. Remove from heat and let stand again until cool. Continue this procedure until the figs acquire a shine and become almost translucent.
Step 6 - Serve the figs in a bowl with plenty of syrup. To preserve: put the figs in sterilized jars.
