Step 1 - In a frying pan, sweat the onions in a little oil until transparent. Set aside.
Step 2 - In a large pot, place the feathered onions at the bottom, the pork ribs on top, then the reserved fried onion, garlic heads, chops and sausages on top. Pour the wine and vinegar and the other condiments.
Step 3 - Cover the pot and cook over low heat for 1½ hours. Uncover and add the chicken pieces. Cover and continue cooking 30 minutes more. Correct the seasoning and serve the stew very hot on large plates.
