Ingredients
  • 1 kilo of smoked pork chops cut in pieces
  • 1 kilo of smoked sausages cut in pieces
  • 1 liter of white wine
  • 1¾ cup white wine vinegar
  • 1 teaspoon ground cumin
  • Salt to taste
  • Pepper to taste
  • 2-3 bay leaves
  • 8-10 chicken trutros.
Instructions
  • Step 1 - In a frying pan, sweat the onions in a little oil until transparent. Set aside.
  • Step 2 - In a large pot, place the feathered onions at the bottom, the pork ribs on top, then the reserved fried onion, garlic heads, chops and sausages on top. Pour the wine and vinegar and the other condiments.
  • Step 3 – Cover the pot and cook over low heat for 1.5 hours. Uncover and add the chicken pieces. Cover and continue cooking for another 30 minutes. Adjust the seasoning and serve the San Juan stew piping hot in large bowls.
