Papaya Jams

  • Fresh Chilean papayas
  • Sugar* Sugar
  • 1 tablespoon of unflavored powdered gelatin dissolved in water.
  • Step 1 - Peel the papayas, cut off the ends and place in a pot of cold water. Bring to a boil over high heat and boil 1-2 minutes; drain and cool.
  • Step 2 - Divide the papayas in halves and remove the center with the seeds. Grind the papayas in a food processor until a paste is formed. Weigh the paste and weigh equal amount of sugar.
  • Step 3 - In a saucepan place the papaya paste, sugar and previously hydrated gelatin. Bring to a boil over medium heat, reduce heat and cook until the mixture thickens, stirring, and until it comes off the bottom of the pot. Remove from heat and let cool overnight.
  • Step 4 - Form small balls with the papaya mixture by hand and roll them in granulated sugar. Let them dry at room temperature and then pack them in an airtight container to keep them dry.
