Salmon Ceviche with Avocado

Ingredients
  • 1.2 kilos of fresh salmon fillet
  • 1 unit of onion, chopped in feathers
  • ½ cup celery, chopped into sticks
  • ¼ green bell pepper, chopped in strips
  • 2 tablespoons fresh oregano leaves
  • ½ cup finely chopped cilantro
  • Salt to taste
  • 4 units of lemon
  • 100cc of clam broth (locos or fish)
  • 1½ large ripe avocado chopped into squares.
Instructions
  • Step 1 - Clean the salmon fillet of bones and dark parts, chop into 1 ½ cm cubes, refrigerate and set aside.
  • Step 2 - Place the salmon, onion, celery and green pepper in a bowl. Add the chopped fresh oregano and cilantro. Season with salt and incorporate everything with the help of a spoon.
  • Step 3 - Then add the lemon juice and broth.
  • Step 4 - Add the avocado and incorporate gently, add salt and mix well. Serve cold
  • Step 5 - Garnish with tender coriander leaves
