3 tablespoons bread crumbs or ½ marraqueta soaked in milk
Salt to taste
Pepper to taste
1 tablespoon dried oregano
½ teaspoon ground cumin
½ red bell pepper, finely chopped
1 carrot in sticks
1½ liters of poultry or beef broth
4 medium potatoes, peeled
4 pieces of pumpkin without peel
4 pieces of corn
1 cup of chopped green beans.
Instructions
Step 1 - Sauté the onion with the garlic in a pan with a little oil until golden brown. Add the chopped parsley. Set aside.
Step 2 - In a bowl place the ground beef, egg, bread crumbs or soaked marraqueta, salt, pepper and the reserved sofrito. Mix well.
Step 3 - With floured hands form the meatballs. Set aside.
Step 4 - In a saucepan, heat the remaining oil over medium heat and brown the meatballs. Add the remaining onion, oregano, cumin, paprika and carrot. Stir.
Step 5 - Add the poultry or beef broth. Bring to a boil and cook for 8 to 10 minutes.
Step 6 - Add the potatoes and squash, cook for 10 more minutes. Add the corn and green beans, cook for 10 to 15 minutes more.
