Step 1 - Boil water with a little salt in a large pot.
Step 2 - With the help of a knife, make an X cut at the base of the chestnuts and add them to the pot of boiling water.
Step 3 - Boil for 10 to 12 minutes.
Step 4 - Separately, make a syrup in a medium saucepan with the sugar, vanilla bean and water. Stir until the sugar dissolves.
Step 5 - Remove the chestnuts and peel them.

Step 6 - Add the peeled chestnuts to the pot with the hot syrup. Cook over medium heat for 40 to 50 minutes or until soft. Keep refrigerated
Step 7 - To preserve: place the chestnuts in sterilized jars and cover with the cooking syrup. Cover the jars and cook them in a bain-marie for 20 to 30 minutes. Remove and allow to cool.
