Step 1 - In a large pot place the meats, bones, chicken, onion, salt, pepper and broth. Cover the ingredients with enough cold water. Cook over medium heat for about 1½ hours or until meats are tender. Stir occasionally.
Step 2 - Add the mote and continue cooking until the meats are crumbled.
Step 3 - Remove the pot from the heat and strain the broth discarding the bones. Return the strained broth to the pot and add the mote, onion and meats.
Step 4 - Separately, prepare a sofrito by heating oil in a skillet over medium heat and sauté the scallions along with the garlic and chopped cilantro.
Step 5 - Add the sofrito to the pot with the soup and cook over high heat. Add more water if necessary.
Step 6 - Finally add potatoes broken by hand and continue cooking until the soup is boiling.
Step 7 - To serve: pour the calapurca into individual bowls and garnish with coriander leaves.
