Ingredients
  • 2 ripe but firm avocados
  • ½ lemon juice
  • Salt to taste
  • Pepper to taste
  • 2 cups of cooked ham chopped in small cubes
  • 1 cup (240 cc) mayonnaise
  • ½ canned paprika, finely chopped
  • 2 tablespoons chopped chives or ciboulette
  • 1 Spanish lettuce in thin julienne strips
  • Pitted black olives for garnish.
Instructions
  • Step 1 - Cut the avocados in halves, remove the pits and peel. Drizzle each half with lemon juice and season with salt and pepper. Set aside.
  • Step 2 - In a bowl, mix the ham with half of the mayonnaise, paprika, chives, salt and pepper.
  • Step 3 - Fill the avocados with the mixture.
  • Step 4 - To serve: put lettuce on a plate and place the stuffed avocados on top. Garnish with olives and mayonnaise. Serve cold.
