  • 2 large eggs
  • 4 egg yolks
  • 4 teaspoons sugar
  • 1 teaspoon orange zest
  • 1 teaspoon lemon zest
  • 2 teaspoons vanilla essence
  • Salt to taste
  • 2 teaspoons cinnamon powder to taste
  • 1 teaspoon nutmeg to taste
  • 2 tablespoons softened butter
  • 3 cups of sifted flour (approx.)
  • 1 teaspoon baking powder
  • Frying oil
  • Sugar or honey to serve.
  • Step 1 - In a food processor place the eggs, egg yolks, sugar, orange and lemon zest, vanilla, pinch of salt, cinnamon, nutmeg and butter. Process until the mixture is homogeneous.
  • Step 2 - In a bowl place the sifted flour and pour the egg mixture. Gather the ingredients to form a dough that does not stick to your fingers, add more flour if necessary.
  • Step 3 - On a smooth surface, roll out the dough very thin; cut 3×25 cm long strips and let it rest for a few minutes.
  • Step 4 - Preheat oil in a frying pan. Roll each strip into the desired shape and fry in the hot oil until golden brown. Remove excess oil on absorbent paper and serve the strips sprinkled with powdered sugar or honey.
